Sausage Pie: Breakfast-Brunch

Sausage Pie Serves 8 8 skinless sausage links ¼ cup chopped green onions ¼ cup or less melted butter ½ cup grated cheese ¾ cup biscuit mix 2 eggs 3 cups frozen Potatoes O’Brien (thaw slightly – to spread) 2 Tblsp. milk 6 oz. softened cream cheese salt & pepper to taste 1/3 cup milk
Heat oven to 400 degrees. Grease a deep pie plate. Spread potatoes in bottom and sides of plate. Mix together onions, 2 Tblsp. milk, cream cheese, salt and pepper. Spread over potatoes.
Lightly brown sausages and arrange in a spoke pattern over potatoes/onion mixture. Beat together biscuit mix, 1/3 cup milk, and eggs. Pour around and over sausages. Bake about 25-30 minutes.
