  • two pounds pork loin (cubed)
  • 3 large potatoes (cubed)
  • four cups green chili (frozen or fresh)
  • two cups chicken stock
  • one can diced tomatoes
  • four cloves of garlic
  • salt to taste
  • one can of pinto beans
  • flour for dredging pork

  1. Cut pork and potatoes in one inch dice. Dredge pork in flour. Brown pork in batches in canola oil. Set aside. Brown potaoes in same pan with pork drippings. Add pork back to potatoes. Add rest of ingredient. Cook over low heat for approx. one hour.
