Hacienda Vargas Pumpkin Pancakes: Breakfast-Brunch

Ingredients:

• 

  1/2 can Pumpkin puree

• 

  1 can Evaporated Milk

• 

  2 Eggs

• 

  2 tablespoons Vegetable Oil

• 

  1 teaspoon Vanilla

• 

  1 teaspoon Cinnamon

• 

  1 teaspoon Allspice

• 

  2 tablespoons Brown Sugar

• 

  2 cups Bisquick

• 

  1/8 cup Roasted Pinions (or nut of choice)

Step 1:

Combine all ingredients except nuts

Step 2:

Mix well

Step 3:

Pour approximately 1/2 cup batter onto greased medium hot griddle

Step 4:

Sprinkle with roasted pinions (or nuts or choice)

Step 5:

Cook until dry around edges, starting to bubble, then turn once. Serve immediately with honey butter and syrup.
