Mexican Bake: Breakfast-Brunch

Ingredients:

  • 10 Eggs

  • 1 cup Whole Milk

  • 1/4 teaspoon Salt

  • 1/4 teaspoon Pepper

  • 1/4 teaspoon Garlic Salt

  • 2/3 can Kernel Corn

  • 2/3 can Black Beans

  • 1 can Rotel diced tomatoes and chilis

  • 1 lb Turkey or Sausage, ground

  • 3 tablespoons Taco Seasoning

  • 1/4 cup Water

  • 6 Corn Tortillas

  • 1 cup Cheddar Cheese, Shredded

Step 1:

Brown ground turkey and drain grease. Return skillet to heat and add water and taco seasoning to turkey and stir, bringing to a simmer until water is absorbed, about 10 minutes. Let cool.

Step 2:

Grease 9 x 13 pan and lay flour tortillas in the corners and bottom with some overlap. Drain and rinse corn and beans and spread evenly over tortillas Drain Rotel diced tomatores and chilis and spread over beans and corn, next spread cooled turkey. Spread cheddar cheese over the top.

Step 3:

Beat Eggs and Milk together and pour over the top. 
(May be made the day before and refrigerated.)

Step 4:

Bake at 350 degrees for 45-50 minutes or until eggs are well set.
