Parkview House Bed and Breakfast
Strawberry soup: Breakfast-Brunch
3 cups Strawberries, hulled and crushed
2 tablespoons lemon juice
3 cups water
1 cup Sugar
2 1/2 tablespoons Tapioca ( Quick cooking )
1 1/3 cups Sweet WHITE Wine
In a sauce pan combine All ingredients EXCEPT WINE, mix well. Over medium heat, Bring to a boil and cook 15 minutes. CHILL. Add wine just before serving. Stirring well.
Garnish with a swirl of softened cool whip, or whipping cream . Top with a mint sprig and a sprinkling of fresh ground nutmeg. Delicious and very refreshing on a hot day. Serves 8.
