Strawberry soup: Breakfast-Brunch

Ingredients:

  • 3 cups Strawberries, hulled and crushed

  • 2 tablespoons lemon juice

  • 3 cups water

  • 1 cup Sugar

  • 2 1/2 tablespoons Tapioca ( Quick cooking )

  • 1 1/3 cups Sweet WHITE Wine

Step 1:

In a sauce pan combine All ingredients EXCEPT WINE, mix well. Over medium heat, Bring to a boil and cook 15 minutes. CHILL. Add wine just before serving. Stirring well.

Step 2:

Garnish with a swirl of softened cool whip, or whipping cream . Top with a mint sprig and a sprinkling of fresh ground nutmeg. Delicious and very refreshing on a hot day. Serves 8.
