Daisy's Double Berry Oat Bran Muffins: Breakfast-Brunch
1 1/2 cups unbleached flour 2 teaspoon baking powder 1 teaspoon baking soda | 1/2 cup brown sugar (packed) 1/2 cup oat bran Preheat oven to 400 degrees Stir together dry ingredients in large bowl. 1 cup plain yogurt 1 egg 1/2 cup canola oil 1 teaspoon vanilla Beat well in small bowl. Stir egg/yogurt mixture into dry ingredients just until moistened. 1 heaping cup of blueberries (can be fresh or frozen) 1 cup of raspberries (best if frozen) Fold blueberries and raspberries into batter. Divide batter between 12 greased muffin cups. Bake in preheated oven at 400 degrees for 15 – 20 minutes or until golden brown.
