Tomatoes Benedict: Breakfast-Brunch

6 English Muffins
1 dozen Eggs
8 Fresh Roma Tomatoes
2 cups Shredded Cheddar Cheese
3/4 cup Mayonnaise
2 teaspoons Dried Basil
Dice tomatoes. Combine with shredded cheddar, mayonnaise and basil. Pour mixture into a pie plate and bake at 350 degrees for about 20 minutes, or until golden brown and bubbly.
Approximately 5 minutes before tomato dish is done, poach the 12 eggs and toast the English Muffins
Prepare 6 plates. Place two toasted muffin halves on each plate. Top each half with a generous tablespoon of the tomato mixture. Place a poached egg on top. Garnish with chopped chives or parsley.
