Banana Pancakes: Breakfast-Brunch

Prep time:15 minutes

Ingredients:

  • 2 cups Unbleached flour

  • 2 tablespoons Sugar

  • 1 teaspoon Baking soda

  • 1/2 teaspoon Salt

  • 2 Eggs (lightly beaten)

  • 2 tablespoons Oil (Canola oil is best)

  • 2 cups Buttermilk

  • 2 Ripe Bananas (mashed)

Step 1:

Mix together dry ingredients. Make a "well" in the dry ingredients.

Step 2:

Add wet ingredients (except bananas) and mix well.

Step 3:

Fold in mashed bananas.

Step 4:

Heat griddle to 350 degrees. Spray griddle and drop 1/4 cup of the batter on hot griddle. Cook until bubbles form then flip to cook other side.

Step 5:

Serve with warm maple syrup. This is a great basic buttermilk pancake recipe. Just leave out the bananas and replace with your favorite addition - blue berries, chopped nuts, chocolate chips, or chopped apples - for a great breakfast pancake!
