Thomas Welsh Shortbread Cookies: Holiday
Prep time:15 minutes
1/2 lb butter
2/3 cup sugar
2 1/4 cups flour
1/8 cup cornstarch
Cream the butter and sugar. Add the flour, cornstarch and blend until smooth. Knead the dough for 10 minutes.
Roll out the dough into a rectangular shape, about 1/4 to 1/2 inch thick. Cut into desired shape...small triangles or rectangles. Score all cookies with a fork.
Bake at 350 degrees for 12 minutes, then 300 degrees for 12 minutes or until they are very slightly golden. Watch that they don't get too brown.
