Blueberry Stuffed French Toast: Breakfast-Brunch

Ingredients:

  • 20-24 slices White Bread (crust removed)

  • 1 1/2 cups fresh or frozen Blueberries

  • 6 Eggs

  • 4 cups half & half

  • 2 teaspoons Vanilla

  • 1 cup Sugar

  • dash of nutmeg

  • Filling Ingredients

  • 16 oz Cream cheese

  • 1 teaspoon Vanilla

  • 2 Eggs

  • 1/2 cup Sugar

Step 1:

Trim crust from bread. Grease the bottom of a 3qt baking dish with non-stick cooking spray. Arrange ½ the bread in the pan so that it covers the entire bottom.

Step 2:

In a separate bowl, mix eggs, ½ & ½, vanilla and sugar. Pour ½ of this over the bread.

Step 3:

In another bowl, combine filling ingredients, (except fruit) until creamy. Pour filling mixture evenly over the bread, then layer with the fruit. Arrange the remaining bread over the filling covering the pan, then pour remaining egg mixture over the bread. Sprinkle with a dash of nutmeg. Cover, refrigerate overnight.

Step 4:

Bake at 350 degrees for one hour until lightly browned.

Step 5:

Sprinkle with powdered sugar and serve with warm Maple Syrup.
