1 cups oatmeal, 1 minute kind, not instant
1 cup buttermilk
1 fresh egg
1/2 cup margarine
1/2 cup Brown Sugar
1/2 teaspoon salt
2 teaspoons baking powder
1 cup flour
1 teaspoon baking soda
12 scant teaspoons raspberry or strawberry jam
Combine and mix the oatmeal and the buttermilk in a bowl. Let stand for 2 minutes.
Add the egg and melted margarine to the oatmeal and buttermilk and stir gently until thoroughly mixed.
In a separate bowl place the dry ingredients of the brown sugar, salt, baking powder, flour and baking soda. Mix these ingredients throughly.
Blend the dry ingredients into the wet. Do not beat the mixture, just gently blend until a well-mixed batter. Over-mixing the batter will result in heavy muffins.
Place the mixture into muffin tin, filling the 12 spaces. Then place a scant teaspoon of jam on top of each muffin. Do not poke into the batter. Place in a preheated oven at 350 degree and bake for 15 minutes.
