Pumpkin Roll: Appetizer-Snack

Ingredients:

  • 2/3 cup canned pumpkin

  • 3 eggs

  • 1 cup sugar

  • 3/4 cup flour

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon nutmeg

  • 8 oz softened cream cheese

  • 1 cup powdered sugar

  • 1 teaspoon vanilla

  • 2 teaspoon butter

Step 1:

Mix all ingredients together and spread in jellyroll pan lined with greased waxed paper. Bake @ 375 for 12-15 minutes – DO NOT OVERCOOK

Step 3:

Beat the icing ingredients together until smooth. (softened cream cheese,powdered sugar,vanilla,butter)

Step 4:

Remove roll from refrigerator, roll out flat and spread icing on it. Re-roll pumpkin roll with icing on the inside. Refrigerate until served. YUM!!
