Lacey Cakes: Breakfast-Brunch

Ingredients:

  • 1 1/2 cups White Flour

  • 1/2 cups Corn Meal

  • 1/4 cup Sugar

  • 3 teaspoons Baking Powder

  • 1 1/2 teaspoons Baking Soda

  • 3 Large Eggs

  • 1 1/2 cups Buttermilk

  • 1 cup Whole Milk

  • 1/2 cup Melted Butter

Step 1:

Combine dry ingredients with a whisk. Beat eggs until light and fluffy, then add buttermilk and milk. Combine wet & dry ingredients. Mix in melted butter and let sit for 5 minutes. Pour 3 - 4 inch cakes onto a medium heated griddle; cook for 2-3 minutes and flip over; continue to cook until golden brown - another 2-3 minutes. Serve with NH maple syrup…Bon Appetit!
