Absurdly large (and intoxicatingly good) breakfast popovers
Temps de cuisson: 60 minutes Portions: 6
6 tablespoon melted butter
2 cups milk
2 cups flour
Beat eggs until foamy.
Whisk in melted butter and milk.
Add 2 cups flour and beat until almost smooth.
Spray 6 custard cups with non-stick spray then fill with batter. Cups should be almost full - about 1/4 to 1/2 inch from the top.
Bake in a preheated 400 degree oven for 50 - 55 minutes. Do not peek until the 50 minutes are up! You may be tempted to check them because they smell so delicious but wait or they may deflate.
The name comes from a USA Today article by Laura Bly. She spent the night then had our popovers the next morning. She called them "absurdly large (and intoxicatingly good) breakfast popovers."
