Pumpkin Pie Pancakes: Breakfast-Brunch

Prep time:15 minutes

Ingredients:

  • 2 cups flour

  • 4 teaspoons baking powder

  • 1 teaspoon cinnamon

  • 1/8 teaspoon nutmeg

  • 1/8 teaspoon allspice

  • 3/4 cup sugar

  • 1 1/2 cups canned pumpkin (fresh, cooked & mashed)

  • 3 eggs

  • 1 cup milk

  • 3/4 cup vegetable oil

  • 1/2 teaspoon vanilla

Step 1:

Mix flour, baking powder, cinnamon, nutmeg, allspice, and sugar

Step 2:

Separately, mix pumpkin, eggs, milk, oil, and vanilla

Step 3:

Combine the dry and wet ingredients

Step 4:

Pour 1/4 cup batter on hot griddle. Cook until bubbles form. Flip and cook other side

Step 5:

Serve hot. Try with sauteed apples or pears. Can be held in 250 degree oven if covered loosely
