Orange Bread Pudding: Breakfast-Brunch

Ingredients:

  • 6 eggs

  • 1 cup sugar

  • 1 tablespoon vanilla flavoring

  • 2 cups half and half (or light cream)

  • 2 cups milk

  • 1 stick unsalted butter, melted

  • 2 loaves of french bread (cut into 1 inch thick slices)

  • 2-3 tablespoons grated orange rind

Step 1:

Butter a large casserole dish. Place one layer of sliced bread into buttered dish. Mix all the above ingredients together (except the bread) and pour half of the mixture over the bread slices in the dish. Place another layer of bread over the first layer. Pour the balance of the egg mixture over this layer. Refrigerate overnight. Bake at 325 degrees for 40-45 minutes, until the custard is set and the top of the bread is lightly browned.
