Zucchini Bread: Bread

Ingredients:

• 

  2 eggs

• 

  1 cup Canola or Safflower oil

• 

  1 cup sugar

• 

  2 cups grated zucchini

• 

  2 teaspoons vanilla

• 

  2 cups flour

• 

  1 teaspoon baking powder

• 

  1/2 teaspoon baking soda

• 

  1 tablespoon ground cinnamon

• 

  1 cup chopped walnuts

• 

  1 cup raisins

Step 1:

Grate unpeeled zucchini in Cuisinart Mix first six ingredients together in a large bowl.

Step 2:

Sift flour, baking powder and baking soda and cinnamon together

Step 3:

Add to the first mixture. Mix well. Add nuts and raisins. Lightly grease loaf pans (2 large or 4 small). Fill and bake at 350 degrees for one hour.

Step 4:

Let cool ten minutes then turnout on baking rack to cool completely. This bread freezes well.
