Asparagus Succotash: Main Dish

Ingredients:

• 

  1 lb asparagus tips

• 

  1 lb whole kernel corn

• 

  1/2 cup mayonnaise or salad dressing

• 

  1/2 cup american cheese or sharp cheddar

• 

  1/2 cup chopped green peppers

• 

  1/2 cup chopped celery

• 

  2 tablespoons chopped onion

• 

  1 cup soft bread crumbs

• 

  2 tablespoons butter

Step 1:

Combine asparagus, corn, mayo or salad dressing, pepper, onion, celery and cheese.

Step 2:

Season mixture with salt and pepper and place into 10x6x1 ½ inch baking dish.

Step 3:

Combine bread crumbs, butter and sprinkle over atop casserole.

Step 4:

Bake in moderate oven for 30 minutes or until the crumbs are brown on top.
