Deerfield Inn Asparagus Cake: Dessert
1 cup pureed asparagus
2 cups sugar
10 whole eggs
1 oz baking soda
pinch of salt
pinch of cloves
pinch of cinnamon
2 cups oil
2 lb bread flour
2 oz baking powder
Combine pureed asparagus, sugar, eggs, baking soda, salt, and spices. Gradually add the oil.
Sift together the flour and baking powder. Add and incorporate the flour and baking powder. Mix until smooth.
Place on well greased sheet pans before placing batter.
Bake at 370º until toothpick comes clean.
Frosting for the cake consists of 3 lbs of cream cheese, 1 1/2 cups of sugar and a teaspoon of vanilla whipped until smooth.
