1/2 cup whole wheat flour
1/2 cup unbleached white flour
2/3 cup cornmeal
1/3 cup rolled oats
2 teaspoons baking powder
4 teaspoons sugar
1/2 teaspoon baking soda
1 cup applesauce
1 cup milk
3 tablespoons melted butter
Mix together all dry ingredients.
Put eggs and applesauce in blender and blend. Add milk and butter, then the dry mix and mix well.
For Cranberry pancakes, put frozen cranberries in a food processor with a steel blade. Add sugar (to taste – I use about 1/4 cup of sugar for 1 cup of berries). Blend until chopped, but leave some big chunks. Stir processed cranberries into batter.
Make pancakes as usual. Serve with butter, maple syrup, jam, applesauce or sour cream.
