Yam Bran Muffins: Breakfast-Brunch

Ingredients:

  • 1/2 cup cooked yam or sweet potato, mashed

  • 1/4 cup molasses

  • 1/2 cup sugar

  • 3 tablespoons vegetable oil

  • 1/4 cup chopped dates

  • 3/4 cup whole wheat flour

  • 3/4 cup unbleached flour

  • 2 cups wheat bran

  • 1 teaspoon baking soda

  • 1 teaspoon cinnamon

  • 1/2 teaspoon nutmeg

  • 1/4 teaspoon ginger

  • 1 egg

  • 3/4 cup buttermilk

Step 1:

Combine first 5 ingredients in a large bowl.

Step 2:

Add dry ingredients.

Step 3:

Beat egg into buttermilk and add to other ingredients, stirring only until moistened.

Step 4:

Spoon into greased muffin tin and bake at 375 degrees for 20 minutes. Makes 12 muffins.
