Eggs Florentine: Breakfast-Brunch

Servings: 4

Prep time:30 minutes

Ingredients:

  • 2 Creamed Spinach/10 oz.

  • 4 Ham slices

  • 4 Eggs

  • 1/3 cup Chopped Water Chestnuts

  • 1/8 teaspoon Nutmeg

  • 1/2 cup Swiss or Montary Jack

  • 2 tablespoons Pimientos

Step 1:

Microwave spinach on high 5-6 minutes

Step 2:

Grease small dishes and line with a ham slice, spread spinich over ham

Step 3:

Make indentation in spinach, crack egg, place in spinich. Sprinkle with nutmeg

Step 4:

Bake at 450 16-19 minutes or until egg is set. Remove and sprinkle cheese and pimientos over and return to oven 2 minutes or until cheese is melted. Serve immediately
