    Located near the banks of the St. Joseph river, amid the trees and rolling pastures, Niles township has gained one more point of interest. The Minisee Bed & Breakfast. Certified Raw Vegan Chef Ruby Minisee has converted her home into a Bed and Breakfast. This rest stop sits on two beautiful acres, about 30 miles South of Highway 94. The home boasts 5 guest rooms and a cozy family room heated by a wood-burning furnace. There is plenty of space to stretch out for the evening and relax. But this is no ordinary place to lay your head for the evening. Guests at this Bed & Breakfast are treated to delicious raw vegan meals. “You won’t get fried eggs here” says Ruby with a chuckle. The super energetic entrepreneur takes pride in serving guests healthy, raw vegan cuisine for breakfast. She also cooks conventional vegetarian food and is very careful to take special eating requirements into account when preparing her menu. For example, if you have gluten allergies or any other condition, that is no problem at all. Having practiced as a Registered Nurse for over 30 years has helped Ruby to gain a keen understanding of the various health conditions and how to cook healthy food that addresses those conditions.

    The bonus of staying here was the education that we received about food and nutrition. Ruby is a Live Food Consultant. She is an advocate of a raw and living plant based diet. We learned first hand that meals prepared in this manner are flavorful and delicious. One breakfast consisted of a slow cook breakfast cereal and the other was a grain and nut based waffle served with homemade fruit jam. We know that her plans for weekend retreats focused on health and nutrition will be very successful. She is an enthusiastic educator with a delightful sense of humor.

    A wonderful peaceful retreat

    Ruby was very accomdating to my needs, the place was wonderful, the views were Excellent, the house was very clean, very peaceful and serene. If you are into vegan/raw food there is also great food as well. overall it was a Perfect stay! I will be coming back again.
