Home Made Blueberry Belgian Waffles: Breakfast-Brunch

Ingredients:

  • 1 3/4 cups All Purpose Flour

  • 1 tablespoon Sugar

  • 3 teaspoons Baking Powder

  • 1/2 teaspoon Salt

  • 1/3 cup Canola Oil

  • 2 Eggs

  • 1 3/4 cups Milk

  • 1/2 cup Fresh Blueberries

Step 1:

In large bowl sift together flour, sugar, baking powder and salt.

Step 2:

In medium bowl put 2 egg yolks, oil and milk. Whisk together

Step 3:

In medium bowl whip 2 egg whites till stiff peaks form.

Step 4:

Add washed blueberries to dry ingredients. Stir the milk mixture into the dry until no dry flour remains. Gently fold the stiffly beaten egg whites into mixture leaving a few fluffs. Heat waffle maker, lightly spray with Pam and add a soup ladle of batter. Cook for +/- 4 minutes, till golden. Serve hot with butter and Maple syrup. Enjoy.
