Guest House Granola: Breakfast-Brunch

Ingredients:

  • 5 cups rolled oats (not instant oats)

  • 1 1/2 cups raw sunflower seeds (salted or unsalted)

  • 1 1/2 cups wheat germ

  • 1 1/2 cups shredded coconut

  • 1 1/2 cups flaked bran (or All Bran)

  • 1 1/2 cups chopped pecans

  • 1 1/2 cups chopped walnuts

  • 1 1/2 cups slivered almonds

  • 3/4 cup raw sesame seeds

  • 3/4 cup vegetable or canola oil

  • 3/4 cup honey

  • 3/4 cup molasses

  • 1 1/2 teaspoons almond extract

  • 1 1/2 teaspoons vanilla extract

  • 2 cups raisins

Step 1:

Combine oats, sunflower seeds, wheat germ, coconut, bran, pecans, walnuts, almonds and sesame seeds in a very large bowl and set aside.

Step 2:

Preheat oven to 350 degrees. In a saucepan, bring oil, honey, molasses, almond extract and vanilla extract to a boil and cook for 4 minutes, or until thoroughly blended. Pour slowly over the dry ingredients in the bowl and gently stir to mix.

Step 3:

Spread the granola evenly on two baking sheets and bake for 5-8 minutes. Remove from oven and stir all ingredients. Return to oven for 4 minutes; remove from oven and stir. Repeat 3 or 4 more times. Watch carefully so it doesn't get too brown. Cool thoroughly and sprinkle with raisins. Note: If granola clumps, return it to the oven and toast a bit more. Makes 4 quarts.
