Door County Cherry Muffin: Breakfast-Brunch

Ingredients:

  • 1/2 cup unsalted butter, softened

  • 1 1/8 cups sugar

  • 2 eggs

  • 3 cups all purpous flour

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • pinch baking soda

  • 1 teaspoon cinnamon

  • 2 teaspoons pure Almond extract

  • 1/2 cup milk

  • 1/2 cup Orange juice

  • 1 1/2 cups Fresh Tart Cherries, or frozen, thawed - course chopped

Step 1:

preheat oven to 400. Place softenned butter and sugar in large mixing bowl. Measure dry ingredients in medium mmixing bowl, set aside. Measure milk, oj and almond extract in measuring cup, set aside.

Step 2:

Cream butter and sugar

Step 3:

add eggs then beat

Step 4:

Alternately add flour mixture and milk/juice mixture to creamed butter/egg mixture, stirring just until moistened. DO NOT OVERMIX.

Step 5:

chop cherries and fold into batter. Divide batter into 12 muffin cups, bake 20 - 25 minutes. (24 min. works perfect in my oven)
