Stuffed Belgian Endive

Ingredientes

  • 2 dozen Belgian endive leaves seperated
  • 1/2 cup Crumbled Blue Cheese or Gorgonzola
  • 1/4 cup Golden and Dark Raisins
  • 2 Scallions

  1. In small bowl place 1/2 cup of crumbled Blue Cheese
  2. Finely chop 1/4 cup of raisins and scallions
  3. Add to blue cheese in bowl and mix well
  4. Sprinkle approximately 1 1/2 tsps of cheese mixture in each endive leave. May be served cold or spray filled leaves with olive oil and bake in oven @450 degrees for 4 minutes.
  5. Arrange on serving plate and serve. Good with a nice Cabernet or Pinot Noir. Handy to keep (well-wrapped) in the refrigerator for up to 4 days as a handy snack.
