Apple Pancake: Breakfast-Brunch

Ingredients:

  • 2 tablespoons Unsalted Butter

  • 2 Granny Smith Apples, peeled, cored & cut into slices

  • 3 tablespoons Sugar

  • 1 teaspoon Cinnamon

  • 3 Eggs

  • 3/4 cup All-Purpose Flour

  • 3/4 cup Milk

  • 1 tablespoon Sour Cream

  • 1/8 teaspoon Salt

  • Confectioners' Sugar for Dusting

Step 1:

Preheat oven to 400 degrees. Spray a glass pie pan with nonstick cooking spray.

Step 2:

In a saute pan, over medium heat, melt butter, add apples, sugar and cinnamon. Saute, stirring constantly until apple begins to soften and brown slightly, 3 - 5 minutes. Remove from heat and set aside.

Step 3:

In a large bowl, whisk eggs until lightly frothy. Add flour, milk, sour cream and salt. Whisk until a smooth batter forms.

Step 4:

Pour batter into prepared pie plate. Top with apple slices and drizzle pan juices over the top of the apples and batter. Bake until pancake is puffed and golden brown, 15 - 20 minutes. Dust with confectioners' sugar. Serves 2.
