Lemon-Blueberry Muffins: Breakfast-Brunch

Ingredients:

  • 2 cups All Purpose Flour

  • 1/2 cup Sugar

  • 1 teaspoon Baking Powder

  • 1/2 teaspoon Baking Soda

  • 1/2 teaspoon Salt

  • 1/4 cup Unsalted Butter-Room Temperature

  • 1 1/4 cups Buttermilk

  • 1 Egg

  • 1 cup Blueberries

  • Cooking Spray for Pans

  • 1 tablespoon Lemon Juice

  • 1/2 cup Powdered Sugar

Step 1:

Preheat oven to 400 Degrees.

Step 2:

Combine Flour, Sugar, Baking Powder, Baking Soda, Salt. Cut Butter into Flour mixture.

Step 3:

Combine Buttermilk and Egg. Add to Flour mixture, stir just until moist. Gently fold in Blueberries.

Step 4:

Spoon batter into 12 muffin cups coated with cooking spray. Bake at 400 Degrees for 20 minutes. Remove muffins from pan and place on rack to cool.

Step 5:

Combine Lemon Juice and Powdered Sugar in a small bowl. Drizzle glaze over cooled muffins.
