CARROT CAKE WAFFLES: Breakfast-Brunch

Ingredients:

  • 1 box Carrot Cake Mix

  • 1/2 cup Chopped pecans

  • 1/2 cup Water

  • 2 Granny Smith Apples

  • 2 tablespoons Butter

  • 1/2 Lemon Juice

Step 1:

Prepare the cake mix according to package directions, adding the shopped nuts plus 1/2 cups of extra water to make a thick, flowing batter.

Step 2:

Peel, core and dice the apples. Melt the butter in a sauté pan and add apples and toss over medium heat. Cover, lower heat and cook until soft but still slightly crisp. Squeeze lemon juice over the apples.

Step 3:

Heat the waffle iron and spray grids with nonstick vegetable spray. Use a ¼ cup measure to pour a puddle of batter in the center of each grid. Cook the waffles until they are firm enough to remove from the waffle iron.

Step 4:

Place waffles on plates and spoon apple mixture over the waffles. Makes 8 servings
