2 cans Chopped Green Chiles
1 lb Monterrey Jack Cheese (Shredded)
1 cup Flour
1/2 cup Vegetable Oil or Melted Butter
1 pint (16 oz) Cottage Cheese
1/2 teaspoon Salt
1 teaspoon Baking Powder
Set oven to 350 degrees. Butter a 13 x 9-inch baking dish. In a bowl, beat the eggs until light and lemon coloured. In small bowl, mix dry ingredients and add to eggs. Add in the rest of the ingredients except the chiles; blend until well combined. Stir in the chilies.
Transfer the mixture into prepared baking dish.
Bake for about 35-45 minutes or until the top is browned and the center appears to be firm.
Variations: Use mini-muffin pan to make appetizers or muffin pan to make individual servings. May be frozen and re-heated.
