Camellia Rose Inn's Fresh Tomato & Basil Quiche: Breakfast-Brunch

Ingredients:

  • 1 cup Shredded Cheddar Cheese

  • 1 cup Shredded Monterey Jack Cheese

  • 1 cup Shredded Swiss Cheese

  • 1 tablespoon All purpose flour

  • 6 Eggs, beaten

  • 1/2 cup Half & Half

  • 3 Roma Tomatoes, sliced in circles

  • 1/2 cup Fresh Chopped Basil leaves

Step 1:

Preheat oven to 350 degrees. Coat an 8 inch quiche dish with non stick spray.

Step 2:

Combine cheeses. In a small bowl toss 1 cup of combined cheeses with flour. Place the cheese/flour mixture in bottom of quiche pan. Add the rest of the cheese on top.

Step 3:

Lightly wisk eggs together, add half & half and wisk till frothy. Pour egg mixture over cheeses.

Step 4:

Sprinkle shredded basil leaves on top of egg mixture and lay tomato slices on top.

Step 5:

Bake 35-40 minutes until center is nicely browned and domed. Let sit out for at least 20 minutes so eggs will set. Cut into 6-8 slices.
