Beckies Moist Banana Bread: Bread

Ingredients:

  • 1 1/2 cups sugar

  • 4 cups All Purpose Flour

  • 2 teaspoons Baking Soda

  • 1 teaspoon Salt

  • 1 teaspoon Cinnamon (ground)

  • 1/2 teaspoon Cardamon (ground)

  • 4 Ripe Bananas

  • 4 Eggs

  • 2/3 cup Plain Yogurt

  • 2 teaspoons Vanilla

  • 1 cup Melted Butter

  • 1 1/2 cups Chopped Toasted Pecans

Step 1:

Heat Oven to 350. Non stick spray 2 9x5 or 4-5 small loaf pans. Melt butter and cool.Toast chopped pecans 5 min or until fragrant, set aside.

Step 2:

Mix the wet ingredients together, add mashed bananas. Mix dry ingredients together. Add the wet to the dry and 1 cup of the toasted pecans(or more if not using on top), just enough to moisten, do not overmix!

Step 3:

Divide into the pans and sprinkle with extra pecans and 1/2 cup sugar( sometimes I use raw sugar on top it makes a little crust!)

Step 4:

Bake for 45-55 mins. Test with toothpick, should be little crumb. Cool on racks for 5 min and then remove to racks to cool. Wrap in foli. This freezes very well, so double it and have it for drop in guests!
