1 cup Flour
1/2 teaspoon salt
1 teaspoon Baking Soda
2 cups Apples
1/4 cup Canola Oil
1 cup Sugar
1 tablespoon Cinnamon
1/4 teaspoon Nutmeg
1/2 cup Walnuts or Pecans
Peel, core & dice sweet apples (golden or red delicious) and place in medium size bowl.
Break egg over apples.
Add oil, sugar, cinnamon, nutmeg & nuts. Blend thoroughly with wooden spoon or rubber spatula.
Stir dry ingredients into apple mixture just until flour is moist. Batter will seem dry.
Spread in a greased or sprayed 8" pan (non stick works well). Bake at 350 for 30 - 35 minutes until a wooden pick comes out clean. Immediately invert on a plate, cut into 16 squares with a serated knife, sprinkle with powdered sugar. Serve warm or cooled.
