Sante Fe Omelet: Breakfast-Brunch

Ingredients:

  • 6 large fresh eggs

  • 1/2 cup mild fresh salsa

  • 1 cup sour cream

  • 1/2 cup artichoke hearts - chopped

  • 1/4 cup monterey jack cheese ~ shredded

  • 1/2 cup cheddar cheese ~ shredded

  • 1/2 cup parmesan cheese ~ grated

Step 1:

lightly cover glass pie dish olive oil or non stick spray

Step 2:

cover bottom with thin layer of salsa

Step 3:

layer with chopped artichoke hearts

Step 4:

layer with three cheeses

Step 5:

whisk eggs and sour cream until smooth and blended. Pour over cheese layer and bake at 350 degrees for 30 minutes
