Brunch Eggs and Green Chilies: Breakfast-Brunch

Prep time:1 hr. 15 m

Ingredients:

  • 8 oz chopped green chilies

  • 1 lb shredded cheddar cheese

  • 7 whole eggs

  • 1 1/2 cups Biscuit mix

  • 1 quart whole milk

  • 3/4 teaspoon salt

Step 1:

Grease 2 round pie plates and line with chilies, and next layer each pan with pie pan with equal amounts of shredded cheese.

Step 2:

Beat eggs with biscuit mix, milk, and salt. Pour batter over cheese and chilies. Bake at 350 degrees for 45 minutes to 1 hour or until puffed and firm. Serves 12-16 people.

Step 3:

NOTE: When you use two 8-9 inch baking dishes, the baking time will be less. Heating in the microwave 1-2 minutes will also speed up the cooking time.
