1 cup Cinnamon Chips (available from King Arthur 800-827-6836)
2 Bananas - one for batter & one for garnish
1 cup Finely chopped walnuts
Whisk together flour, brown sugar, baking powder, baking soda & salt. Mix in cinnamon chips and make a well in center of bowl.
Whisk together eggs, sour cream, buttermilk & melted butter. Add to dry ingredients and stir gently with a wooden spoon just until ingredients are mixed - don't overmix!
Gently stir in one thinly sliced banana and chopped walnuts.
Refrigerate for 60 minutes before frying in hot oil on a griddle or in a frying pan. Drop using scoop that holds approximately 3-4 tablespoons batter. (I use the large Pampered Chef scoop that holds 3 tablespoons and make it heaping - the perfect size!)
Serve with whipped cream, banana slices, finely chopped pecans and syrup.
