Harvest Salad: Salad

Servings: 6

Prep time:15 minutes

Ingredients:

  • 1 Head Romaine Lettuce - chopped

  • Baby Spinach Leaves - 1 small bag

  • 1 Pomegranate - Seeds removed, washed & set aside

  • 2 Fugi or Braeburn Apples - peeled, sliced & core removed

  • 1 cup Pecan Pieces

  • 3/4 cup Raisins - soft and plump

  • 1/2 cup Extra Virgin Olive Oil

  • 1/3 cup Aged Balsamic Vinegar

  • 1 tablespoon Salt

Step 1:

SALAD: Wash lettuce and spinach, drain and portion into 6 lunch sized servings.

Step 2:

Cut apples into bite sized pieces and top each salad plate with even amounts.

Step 3:

Top each salad with evenly portioned pomegranate seed berries, pecan pieces and raisins.

Step 4:

DRESSING: In a mixing jar with cover, ... place the oil, vinegar and salt. Shake well and top each salad with an even amount. Serve and Enjoy!!
