Fresh Strawberry Crepes: Breakfast-Brunch

Ingredients:

  • 2 Eggs

  • 1/2 cup Flour

  • 1/8 teaspoon Salt

  • 1 tablespoon Melted Butter

  • 1/4 cup Milk

  • 1/4 cup Water

  • 3/4 tablespoon Sugar

  • 1 teaspoon Vanilla

Step 1:

Whisk together crepe batter ingredients until smooth. Heat a crepe pan (or commercial crepe maker) until hot and pour about 1/4 cup batter in, rotating the batter to make a thin covering. Crepe is done when the edges turn brown.

Step 2:

FILLING: 1 pkg. (8 oz.) cream cheese 1/4 c. butter, softened 1/4 c. powdered sugar 1 tbsp. milk 1 tbsp. dry sherry 1/2 tsp. vanilla 1 1/2 c. fresh sliced strawberries

Step 3:

Combine filling ingredients except strawberries and fill crepes. Add strawberries in and on top of folded crepes and serve warm. Whipped cream should be offered with this dish.
