Mexican Eggs: Breakfast-Brunch

Servings: 6

Prep time:15 minutes

Ingredients:

  • 6 Green chiles, diced

  • 1 1/2 cups Cheese, Colby Jack, grated

  • 9 Eggs

  • 1 1/2 cups Milk

  • 3/4 teaspoon Salt

  • 1/4 teaspoon Pepper

  • 1 clove Garlic, minced

  • 1 teaspoon Cumin, ground

  • 1 teaspoon Cilantro

Step 1:

Preheat oven to 350 degrees. Spray the bottom and sides of three 6-inch ramekins with non-stick spray. Divide the diced chiles evenly in the three ramekins. Place 1/2 cup of the grated cheese in each ramekin. Place remaining ingredients in a blender and whirl until blended. Divide egg mixture evenly between the three ramekins. Place into preheated oven and bake approximately 40 minutes, or until puffed and golden brown.

Step 2:

Remove from oven and allow to cool for a few minutes before cutting. Cut each ramekin into fourths and serve two pieces to each person.

Step 3:

We serve this dish with guacamole, salsa and sour cream.
