Cranberry Walnut Bread: Dessert

Prep time:10 minutes

Ingredients:

  • 2 eggs

  • 1 1/4 cups sugar

  • 1 1/2 teaspoon vanilla

  • 1 1/2 sticks unsalted butter

  • 1 1/2 cups bread flour

  • 1 1/2 cups dried or whole fresh cranberries

  • 1 1/2 cups coarsely chopped walnuts

Step 1:

Beat eggs and sugar with electric mixer at medium speed until light yellow and thickened. Beat in melted butter and vanilla

Step 2:

On low speed, thoroughly mix in flour

Step 3:

Add cranberries and chopped walnuts Stir mixture to combine all ingredients ( the texture will be similar to lumpy mashed potatoes )

Step 4:

Place rack at middle position Preheat oven to 350 degrees F Generously grease and lightly flour a loaf pan

Step 5:

Spoon batter into the prepared pan and smooth top with a rubber spatula. Bake for about 1 hour 15 minutes until firm and golden brown. THIS IS BEST IF SERVED THE NEXT DAY
