Healthy Bran Muffin: Breakfast-Brunch

Ingredients:

  • 1 cup flour

  • 2 1/2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon cloves

  • 1/3 cup sugar

  • 1 cup low fat milk

  • 1 1/4 cup 100% bran cereal

  • 1 egg

  • 1/4 cup corn or vegetable oil

  • 1 cup raisins

Step 1:

Stir together bran cereal and milk until moistened; let stand 5 minutes. Blend together dry ingredients. Add egg and oil to bran mixture. Beat by hand until blended. Add dry mixture to wet, and blend until just combined. Spray muffin tins with vegetable oil. Add mixture. Bake at 400 degrees about 15 minutes or until done.
