Oatmeal Muffins: Breakfast-Brunch

Ingredients:

  • 1 Stick butter, softened

  • 1/2 cup Sugar

  • 2 Eggs, large

  • 3/4 cup Crushed pineapple, drained well

  • 1 cup Oatmeal

  • 1 cup All-purpose flour

  • 2 teaspoons baking powder

  • 1 teaspoon Cinnamon

  • 1 or 2 cups Fresh Blueberries

Step 1:

Preheat oven to 350 degrees. Line muffin pan with paper liners. About 24 Blend sugar and butter until light and fluffy. Add in eggs and well drained pineapple. Gradually add in dry ingrediants. Add blueberries. Fill cupcake lines 3/4 full. Bake at 350 for about 20 minutes.
