Chile Egg Puff: Breakfast-Brunch

Prep time:30 min.

Ingredients:

  • 10 eggs

  • 1/2 cup flour

  • 1 teaspoon baking powder

  • 1 pint cottage cheese

  • 1 lb monterrey jack cheese

  • 1/2 cup melted butter or margarine

  • 4 oz can diced green chile

Step 1:

Beat eggs well, add the rest of the ingredients, blend until smooth. Pour into buttered 9x13 dish.

Step 2:

Bake at 350 degrees for approximately 35 minutes or until golden and puffed up.

Step 3:

Serve with hot flour tortillas and fresh salsa.
