Fresh Apple Coffeecake: Breakfast-Brunch

Ingredients:

  • 1 cup Sugar

  • 3 eggs

  • 2 cups flour

  • 1 1/2 teaspoons baking powder

  • 3/4 cup melted butter

  • 1/2 cup milk

  • 1 teaspoon vanilla

  • 2 apples

  • 1/4 cup Sugar

  • 1 1/2 teaspoons cinnamon

Step 1:

Preheat oven to 375 Beat sugar & eggs in mixing bowl.

Step 2:

In a separate bowl, toss flour & baking powder

Step 3:

To sugar & egg mixture add: 1/3 flour, melted butter & mix; Add another 1/3 flour & mix; Add milk, vanilla, remaining flour & mix

Step 4:

Peel & core 1 apple and chop in small pieces. Gently fold in to batter. Pour into prepared pan.

Step 5:

Combine 1/4 c. sugar with cinnamon and pour over batter. Core & cut second apple. Cut into chunks and place core-side-up on top of cake. Bake 35-40 minutes at 375 degrees until toothpick inserted in center comes out clean. Cool 10 minutes before serving.
