Wild Maine Blueberry Whole Wheat Muffins: Breakfast-Brunch

Prep time:1/2 hour

Ingredients:

  • 4 tablespoon melted butter

  • 2 c. minus 2 Tb Whole Wheat Pastry Flour

  • 1 tablespoon baking pwder

  • 3/4 teaspoon salt

  • 1/4 cup raw sugar

  • 1 cup whole milk

  • 2 eggs, well beaten

  • 1 1/2 cups Wild Maine frozen blueberries coated with 1/4 c. of prescribed flour

Step 1:

Preheat oven to 400 degrees F. Melt butter.

Step 2:

Grease muffin tins with unmelted butter.

Step 3:

Sift the dry ingredients in a bowl. Mix the milk with the eggs and stir in butter.

Step 4:

Combine the two mixtures and stir in blueberries. Spoon into muffin tins until half full.

Step 5:

Bake 15 to 20 minutes and turn out immediately. These are wonderful for breakfast or as a snack and they're healthy too!
