Stuffed French Toast: Breakfast-Brunch

Servings: 6

Ingredients:

  • 4 Eggs

  • 1 cup Heavy Cream

  • 1 teaspoon Orange Extract

  • 1 pinch Nutmeg

  • 1 pinch Cinnamon

  • 1 Large loaf French Bread, sliced

  • 1/2 cup Amaretto

  • Sliced Apples

  • Raisins

  • 1 Stick Butter

  • 1 cup Dark Brown Sugar

  • Bananas

  • Confectioners Sugar

  • Almonds, sliced

  • Maple Syrup

Step 1:

Beat the eggs together. Add next 4 ingredients. Mix well. (This can be made and stored in the refrigerator the night before serving).

Step 2:

Place apples and raisins in Amaretto and poach in microwave for about 1 minute. Set aside. Melt the butter. Add brown sugar to melted butter. Add poached apples and raisins. Set aside.

Step 3:

Dip bread slices in egg mixture and fry in hot skillet until golden brown. Remove from heat.

Step 4:

Add bananas to butter, sugar, apples and raisins. Place a spoonful of fruit mixture between 2 slices of French toast. Sprinkle with confectioner's sugar and sliced almonds. Serve with maple syrup.
