Apple Pancake: Breakfast-Brunch

Ingredients:

  • 1 cup pancake mix

  • 1 egg

  • 1/2 cup milk

  • 2 tablespoons butter

  • 1 apple, peeled & sliced

  • 1/3 cup pecans, chopped

  • 3 tablespoons maple syrup

  • 1/2 teaspoon cinnamon

Step 1:

Preheat oven to 350 degrees. Spray a 9 inch pie pan with PAM.

Step 2:

Melt butter in the pie pan, in microwave, about 30 seconds. Place sliced apples around the outside of pan, in a ring, then fill in the middle of pan with left over slices. Spinkle first cinnamon, then pecans over the top of apples. Drizzle syrup over the pecans & cinnamon.

Step 3:

Stir the pancake mix with the egg & milk, pour over the top of the apples, and bake for 25-30 min.

Step 4:

After it comes out of the oven, invert on a plate, and slice into 4, 6, or 8 slices, depending on number of people to be served, serve immediately.
