PUMPKIN PECAN MUFFINS

Ingredientes

  • MUFFINS:
  • 1 1/4 cups oats
  • 1 cup flour
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 tsp. nutmeg
  • 1/2 tsp. baking soda
  • 1/3 cup chopped pecans
  • 1 cup pumpkin
  • 3/4 cup brown sugar, packed
  • 1/2 cup vegetable or canola oil
  • 1 egg
  • 1/4 cup milk
  • 1 tsp. vanilla extract
  • STREUSEL TOPPING:
  • 1/4 cup oats
  • 1/4 cup flour
  • 1/4 cup brown sugar, packed
  • 3 Tbsp. chopped pecans
  • 1/4 cup butter, cut into small pieces

  1. Preheat oven to 400 degrees.
  2. PREPARE STREUSEL TOPPING: Combine oats, flour and brown sugar. Cut butter into dry ingredients. Mix in pecans. Set aside.
  3. PREPARE MUFFINS: Combine oats, flour, cinnamon, salt, nutmeg, baking soda, and pecans in large bowl and set aside.
  4. In a medium bowl combine pumpkin, brown sugar, oil, milk, egg, and vanilla. Stir into dry ingredients. Pour into 12 muffin cups.
  5. Sprinkle with streusel topping and bake for 15 to 20 minutes, until the topping is golden brown.
