Angel Eyes: Breakfast-Brunch

Prep time:30 minutes

Ingredients:

  • 12 slices virginia baked ham

  • 1 dozen large eggs

  • 1/2 cup zuccinni, summer squash,red/green pepper, onion

  • 1/2 stick butter

  • 1/2 cup sour cream

  • 1/2 teaspoon pepper

  • 1 teaspoon fresh or dried tarragon

  • vegtable spray

Step 1:

Pre heat oven to 375. Slice all of the vegatables small juilliene style

Step 2:

melt butter in frying pan and saute vegtables until tender. About 5 minutes

Step 3:

add sour cream, pepper and tarragon. Remove from heat.

Step 4:

Spray a 12 cup muffin tin with vegtable spray. Place one slice of ham in each cup of muffin tin forming a small nest. Fill each ham nest with one tablespoon of vegtable mixture.

Step 5:

Crack an egg into each one of the ham nests covering the vegtables. Sprinkle tarragon on the eggs and bake for 20-30 minutes depending on how you like your eggs cooked. Remove from tin and serve with english muffins.
